Peach xtra ingredients like eggs, oil, etc., which is such a time-saver on busy mornings.  We often bake a dozen or half-dozen muffins ahead of time, freeze, and then pop them in the toaster-oven for breakfast or for a snack throughout the week. 

season is still in full-effect here in North Carolina, so it just makes good sense to add them to everything we're cooking at the moment.  This recipe makes 6 jumbo or 12 regular sized muffins. 

 

You'll need: 

2 cups of Lindley Mills Marvelous Oat Bran Muffin Mix 

1 cup of diced peaches 

1/2 cup of buttermilk 

1/4 cup of chia seeds 

Directions: 

1. Preheat oven to 400 degrees Farenheit 

2. Dice fresh peaches 

3. In a medium bowl, stir ingredients until blended 

4. Fill muffin cups 2/3 full 

5. Bake for 17 to 20 minutes until golden brown on top
